Cheddar scalloped potatoes recipe
INGREDIENTS
1 onion, chopped
4 tablespoons butter
4 tablespoons flour
1⁄2 teaspoon salt
1⁄4 teaspoon pepper
1/1⁄2 cups milk
6-7 potatoes, peeled and sliced (I used Russet)
2 cups shredded cheddar cheese, divided into 1.5 and .5 cups
Optional ingredients: dash of cayenne pepper, thinly sliced zucchini or yellow squash and/or diced peppers to add to the potatoes.
DIRECTIONS
Pull out a large dairy pot.
Saute chopped onions in butter until they soften but before they brown.
Combine flour, salt and pepper. Then stir the flour mixture into onion mixture. After that is combined add the milk.
Stir and cook the mixture over medium heat for about 3 minutes until it thickens.
Turn off heat.
Add 1 1/2 cups shredded cheddar to the sauce and stir untill it's melted and smooth.
Add sliced potatoes and stir well to combine. (You can also add in the peppers and/or squash now if you opted for it.)
Pour mixture into a 9 x13" dish.
Cover with foil and bake at 350 for 35 minutes. (It's not done yet).
Remove the foil and sprinkle reserved 1/2 cup cheese over top. Bake another 30 minutes or so or until potatoes are soft and cheese appears somewhat browned.
