Oatmeal Chocolate Chip Bars
If you've been in Trader's Joe's lately, you should have noticed that the certified kosher pareve semi-sweet chocolate chips are back! To make use of the the ones I bought, I adapted an easy recipe I found for oatmeal choc. chip bars, and it was well-received --as in eaten up down to the last crumb.
The biggest deviation I made from the original recipe was that I made the full batch in a square pan to make the bars thick. If you like them thin, spread the batter out in a 9x13 instead.
Oatmeal Chocolate Chip Bars
Ingredients
- 1 c. flour
- 6 tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 c. brown sugar
- 1 c. oatmeal (I used old fashioned, though the recipe called for quick)
- 1/2 c. semi-sweet chocolate chips (go Trader Joe's pareve!)
- 1 egg slightly beaten
- 1/2 c. canola oil
- 1/2 tsp. vanilla
Instructions
Preheat oven to 350
- Combine flour, sugar, salt, baking powder and baking soda.
- Mix in brown sugar, oatmeal and chocolate chips.
- Add egg, oil and vanilla. Mix thoroughly.
- Press into un-greased pan -- 8" square for thick or 9x13 for thin. (no need to grease it)
- Bake at 15 minutes for thin or 25 minutes or so for thick or until lightly browned.
