Oatmeal Chocolate Chip Bars

If you've been in Trader's Joe's lately, you should have noticed that the certified kosher pareve semi-sweet chocolate chips are back!  To make use of the the ones I bought, I adapted an easy recipe I found for oatmeal choc. chip bars, and it was well-received --as in eaten up down to the last crumb.

The biggest deviation I made from the original recipe was that I made the full batch in a square pan to make the bars thick. If you like them thin, spread the batter out in a 9x13 instead.


Oatmeal Chocolate Chip Bars 

Ingredients

  • 1 c. flour
  • 6 tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 c. brown sugar
  • 1 c. oatmeal (I used old fashioned, though the recipe called for quick)
  • 1/2 c. semi-sweet chocolate chips (go Trader Joe's pareve!)
  • 1 egg slightly beaten
  • 1/2 c. canola oil
  • 1/2 tsp. vanilla

Instructions


Preheat oven to 350
  • Combine flour, sugar, salt, baking powder and baking soda.
  • Mix in brown sugar, oatmeal and chocolate chips.
  • Add egg, oil and vanilla. Mix thoroughly.
  • Press into un-greased  pan -- 8" square for thick or 9x13 for thin. (no need to grease it)
  • Bake at 15 minutes for thin or 25 minutes or so for thick or until lightly browned.
